Pretzel-Crusted Catfish

Ingredients 4 catfish fillets (6 ounces each) 1/2 teaspoon salt 1/2 teaspoon pepper 2 large eggs

1/3 cup Dijon mustard 2 tablespoons 2% milk 1/2 cup all-purpose flour 4 cups honey mustard miniature pretzels, coarsely crushed Oil for frying Lemon slices, optional

Directions Season catfish with salt and pepper to taste. In a shallow bowl, whisk together eggs, mustard, and milk. Put pretzels and flour in several shallow basins.  

With an electric skillet, heat 1/4 inch of oil to 375°. Fry a couple fillets at a time for three to four minutes on each side, or until the fish flakes easily with a fork. blot with paper towels. If preferred, garnish with slices of lemon.
