Feta Tomato-Basil Fish

Ingredients 1/3 cup chopped onion 1 garlic clove, minced 2 teaspoons olive oil

1 can (14-1/2 ounces) Italian diced tomatoes, drained 1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil 1 pound walleye, bass or other white fish fillets 4 ounces crumbled feta cheese

Directions Sauté the onion and garlic in oil in a saucepan until they are soft. Include the basil and tomatoes. Heat till boiling. Simmer for five minutes, uncovered, on low heat.

Broil fish for 5 to 6 minutes at a distance of 4-6 inches from the heat source. Add cheese and tomato mixture to the top of each fillet. Fish should flake readily with a fork after another five to seven minutes under the broiler.
